Our Fior Di Latte Cheese
Rather than buying ready to use, over-processed mozzarella cheese, every morning we stretch blocks of natural curd cheese by hand to transform them into delicate and delicious Fior di Latte mozzarella. It is a real old-world craft and time-consuming process, but you can taste and feel the difference; Our cheese is lighter and tastier.
Our Dough
Our dough is simple: no GMO Italian 00 flour, water, sea salt, yeast, and nothing else. We ferment the dough for 36 hours or longer. This is not only important for a great tasting pizza, with the natural and slow fermentation, the yeast eats away much of the sugar, leaving only complex carbs, which are much easier to digest and lowers its glycemic index.
